You never knew you wanted it until you heard the name, right? But now? Oh, pickle pizza is ON!
So, the Fathead pizza dough base is all over the internet. I'll go ahead and link you to Fathead if you want to use the recipe that started it all. I'm also just going to write it out here in case you haven't tried it yet.
1 1/2 cups shredded mozzarella
2 oz cream cheese, cubed
3/4 cup almond flour
1 egg
Garlic salt
Preheat oven to 425. While that's heating - add the mozzarella and cream cheese together in a microwaveable bowl. Nuke it for 1 minute. Take it out, stir. Microwave again for 30 seconds. Add in the almond flour and egg. Stir it all together.
Get a cookie sheet out, put some parchment paper on it. Don't think you can do this without parchment paper.
Wet your hands so you can handle the dough. Scoop it up, make the dough ball, then place on parchment paper, and spread out the dough with your fingers. Take a fork - dock it (i.e., fork it with holes. Throw some garlic salt on that bad boy.
Stick in oven for 8 minutes. Check on the dough, if there are huge bubble, puncture them with your docking fork. Place back in oven for 7 minutes.
At this point, you have a beautiful pizza canvas. The possibilities are endless. But stick with me, and you're gonna love this pickle pizza!
4 slices thick cut bacon
1/4 cup Alfredo sauce
3/4 cup sliced pickles
3/4 cup shredded mozzarella
Fresh dill, chopped
First of all, no matter what you put on a Fathead pizza, make sure all your meats are fully cooked the way you want it before you throw it on your pizza canvas.
So, fry up your bacon, let sit on a couple of paper towels for a bit, then chop up the bacon, or tear it apart with your bare hands.
Spread the Alfredo Sauce over your pizza crust. I have alfredo sauce in my pantry, with good carb counts, so I'm using Bertolli Mushroom Alfredo. I do have a tangy, tasty sauce that I'll share the recipe for another dish later, because tonight? This is fast food, I want a pizza night! I'm using the damn sauce in the cupboard!
Sprinkle a layer of cheese over the Alfredo. Then add a layer of pickles, the crumbled bacon, and the fresh dill.
Then, throw some more mozzarella cheese over the pile of deliciousness, and put back in oven to get your melt on. About 8 minutes.
Cut into 6 slices. Each slice is a serving, which puts each slice at 4g net carbs, (5g total) 2g fiber, 27g fat, 17g protein, 321 calories. I used CarbManager app to get the nutritional information.
