Instant Pot Pulled Chicken with Alabama White Sauce

I visited Huntsville, AL with my good friend Myria, and she and her Mom drove me around to visit all the good food spots. Most importantly, she introduced me to Alabama White Sauce, which is a mayonnaise based BBQ sauce, and is PERFECT with pulled chicken.


I'm not gonna get into the merits of mayo based BBQ, because if you don't like it, it just means you haven't tried it.


The other thing about this recipe? I am a pickle juice enthusiast. I almost always marinate my chicken overnight in leftover pickle juice (either make my own, or Vlasic!) Eat your pickles, and save the juice, you will thank me for this the first time you try it. If nothing else makes you want to try it, Chik-Fil-A marinates their chicken in pickle juice, which is why it's so juicy and craveable. Especially on a Sunday.


Ingredients:


Instant Pot Pulled Chicken


3 boneless, skinless chicken breasts

1 cup pickle juice


Keto Alabama White sauce


1 cup mayonnaise

1/3 cup apple cider vinegar

3 tsp pickle juice

1 tsp Worcestershire Sauce

Dash of Kosher salt

Dash of Black Pepper

1 tbsp hot sauce


For the chicken, marinate in pickle juice overnight. Just stick it in a sealable ziplock and let it chill in the fridge.


When you're ready, throw the chicken breasts in the Instant-Pot, with a cup of leftover pickle juice. (If you truly don't have any pickle juice, just use water, but you're missing out.) Pressure cook it for 15 minutes, then take a couple of forks and pull that tender juicy chicken to shreds!

Alabama White Sauce, tangy & delicious with poultry!


For the White Sauce: Stir all the ingredients together. If you serve immediately, it will be runny (but still delicious) - if you want a thicker consistency, make it ahead of time and chill in the fridge up to a week. The picture used in this blog post is chilled. ;)
